  3. Add the green pepper(reserving 4-5 stripes) stir for the last time and take it dwn. Break the eggs into a bowl. Add a pinch of salt to taste. Pour the sauted mixture into the bowl and stir. Now with a clean fry pan, and,on low heat, heat up 2 table spoons of oil, pour in the mixture, and carefully place the plantain till it covers the whole pan.
  4. Sprinkle the reserved peppers on top and cover your fry pan and leave for 20-25mins until u sure the egg is all caked.
  5. When that is achieved, Turn off heat and serve. Yummy right?
