  14. 1 Tbsp Chinese cooking wine
  15. Optional Add-on
  16. 1 portion (~3cmx5cm) salted fish, fried and cut into small cube
  17. 2 Chinese sausage, sliced

Instructions to make to make Mushroom Chicken Rice

  1. Marinade chicken for about 30 to 60 minutes
  2. Add cooking oil in pan. Fry shallots till golden brown. Add in dried shrimp and sausage (optional) when shallot starts browning.
  3. Add in mushroom. Stirfry for a bit for the mushroom flavour to release.
  4. Add in chicken without the marination sauce. Reserve the marination sauce for the next step. Stir fry till chicken is partially cooked.
  5. Add in rice and fry the rice for a bit. Arrange the rice evenly on the pan
  6. Add some water into the reserved sauce to dilute. Pour them into the pan. Top up with more water until rice is fully covered.
  7. Once the water starts boiling, lower the heat and boil for about 30minutes until rice is cooked
  8. Rice can be served with a vegetable dish and dinner is complete
  9. Rice can be garnished with spring onion
